Whole Wheat Ricotta Scones with Fresh Blueberries and Dried Cranberries: a healthy breakfast to say “I LOVE YOU”

Saint Valentine is a a day for romance. Whoever you love, your boyfriend, your girlfriend, your husband, your wife, your children, your parents, your friends, and above all yourself, this recipe will conquer you. It is healthy, tasty and full of warmth.
One of my favorite author/food blogger, Deb Perelman, published this recipe on her fabulous book “Smitten Kitchen” and my guru, Heidi Swanson, author of “101 Cookbooks”, made these scones slightly changing the ingredients. Well, I already baked them six times, and believe me they turn yummy with all the berries, blueberries, blackberries, raspberries, and even with dried apricot and mandarins. To give them a sweeter taste, instead of increasing the sugar amount, I usually add some dried cranberries or raisins.
A useful tip I learnt from Deb is to bake the scones, let them cool, put them in freezer bags and refrigerate them. Whenever you feel the need of a scone – because it will become a need to have one!!! – just put it in the toaster or in the oven for a couple of minutes and you have a scone even more fragrant than just baked.
Ingredients:
1 cup whole wheat flour
1 cup unbleached all-purpose flour
1 Tablespoon aluminum-free baking powder
1/3 cup turbinado sugar
½ teaspoon salt
4 Tablespoons butter, chilled
2 Tablespoons extra virgin coconut oil
1 cup fresh blueberries
2/3 cup dried cranberries
3/4 cup ricotta cheese
1/3 cup plain yogurt
Method:
Preheat the oven to 425F.
In a large bowl combine all the dry ingredients (flours, baking powder, sugar and salt) together.
Work the butter, cut into small pieces, into the flour using your fingertips. The texture will be similar to sand.
Put the fresh blueberries in a plate and chop them with a fork roughly.
Combine together the coarse mixture with all the berries, yogurt, and ricotta. With the help of a silicone spatula stir the ingredients together to form a soft dough. Floured a surface or, as I do, your counter, and transfer the dough on it. Flour your hand and the surface of the dough, and pat it into a circle about 1 inch high. With a large knife divide the circle in four slices. Then divide each slice in two pieces to get, at the end, 8 triangles.
Cover a baking pan with a sheet of parchment paper and transfer the scones on it. Bake for 15/17 minutes until golden and dry. Let them cool for a couple of minutes in the pan, and transfer them on a rack to cool completely.

E’ sana, golosa e piena di calore per scaldarvi in questi giorni di gelido inverno.
Una delle mie autrici/blogger preferite, Deb Perelman, ha pubblicato questa ricetta nel suo favoloso libro “Smitten Kitchen”. La mia guru, Heidi Swanson, autrice di “101 Cookbooks”, ha provato a realizzarla cambiando leggermente gli ingredienti. Potevo non provare anch’io ed apportare l’ennesima modifica???
Beh, tenete presente che ormai li ho preparati almeno sei volte ed il risultato è sempre stato strepitoso. Sono gustosissimi con qualsiasi tipo di frutto di bosco: mirtilli, lamponi, more e, addirittura con le albicocche ed i mandarini disidratati preventivamente ammollati in acqua. Rispetto alla ricetta originale ho sostituito la panna con un più leggero yogurt e per conferire maggiore dolcezza, invece che aumentare la quantità di zucchero, ho aggiunto un po’ di frutta secca, come i cranberries (mirtilli rossi che immagino non si trovino in Italia…) o l’uvetta passa.
Vi svelo poi un piccolo segreto suggerito da Deb nel suo libro: cuoceteli, lasciateli raffreddare, metteteli in sacchettini da freezer e congelateli. In qualsiasi momento della giornata sentiate la necessità di mangiare uno scone – e credetemi, diventerà una necessità non appena li abbiate provati! – prendetene uno, mettetelo un paio di minuti in forno o nel tostapane ed avrete uno scone addirittura più fragrante che uno appena sfornato
Ingredienti:
1 cup farina integrale
1 cup farina bianca
1 Tablespoon lievito per dolci
1/3 cup zucchero di canna
½ cucchiaino sale
4 Cucchiai burro freddo
2 Cucchiai olio di cocco extra vergine (oppure burro)
1 cup mirtilli freschi
2/3 cup mirtilli rossi disidratati (o uvetta passa)
3/4 cup ricotta
1/3 cup yogurt bianco
Preriscaldate il forno a 220°C.
In una ciotola di dimensioni medio grandi unite insieme le farine, il lievito, lo zucchero ed il sale. Unite il burro e l’olio di cocco (che potete tranquillamente sostituire con un altro paio di cucchiai di burro) tagliati a pezzetti e lavorate la farina con la punta delle dita sino ad ottenere un impasto di consistenza sabbiosa.
Versate i mirtilli in un piatto e schiacciateli grossolanamente con l’aiuto di una forchetta.
Unite i mirtilli, i mirtilli rossi, la ricotta e lo yogurt all’impasto di farina e burro. Mescolate bene con l’aiuto di una spatola sino a formare un impasto morbido. Fate attenzione a non lavorare troppo gli ingredienti, perché rischiereste di ottenere un impasto troppo umido.
Trasferite l’impasto su una superficie rigida preventivamente infarinata e con le mani infarinate formate un cerchio dello spessore di due cm circa. Con un coltello grande dividere l’impasto in 4 parti e ogni fetta in ulteriori 2 sino ad ottenere 8 triangoli.
Ricoprite una teglia con un foglio di carta da forno e adagiatevi sopra gli scones. Cuocete per circa 15/17 minuti sino a che abbiano un colore dorato e si siano asciugati. Sfornateli e lasciateli raffreddare un paio di minuti nella teglia. Dopodiché trasferiteli su una grata per dolci e fateli raffreddare completamente.

Thank you for sharing your scones! I warmed them up in the oven, and they were a delicious breakfast! My friend (who had only had dry, boring scones previously) loved them!!
That is, in my opinion, the best way to enjoy them.
Bake them, let them cool down, eat a couple (!!!), and store the others in the freezer. Whenever needed take one and warm it up in the oven or in the toaster. Et voilà, your breakfast is ready!
